Freshly grated parmesan blended with ricotta cheese, wrapped in delicate egg pasta and formed into mini raviolis. These raviolinis are particularly fun for kids and great for pasta salads. Try skewering them with mozzarella balls, cherry tomatoes, fresh basil and olives for a decorative appetizer.
